In fall semester 2021, students in this 251 American literature survey class examined foodways from Africa to America as seen in slave narratives from the 1840s and 1850s and in conjunction with the acclaimed Netflix documentary High on the Hog and the book that inspired the documentary, High on the Hog: A Culinary Journey from Africa to America, by Jessica B.
